Thai iced tea — cha yen — is one of those drinks that is instantly recognisable even to people who have never had one: the vivid orange colour, the layer of condensed milk sitting on top before it gets stirred in, the bold, spiced tea underneath. It shows up on menus across Sydney at Thai restaurants and cafes, but it rarely shows up in dessert form done properly. That was the gap we wanted to fill.

What is Thai milk tea, and where does the orange colour come from?

Thai milk tea is a strongly brewed black tea, traditionally spiced with ingredients like star anise, tamarind or orange blossom depending on the blend, sweetened, and finished with condensed and evaporated milk. The characteristic orange-red colour traditionally comes from the tea blend itself — in Thailand this is most commonly a commercial blend, with ChaTraMue among the most recognised brands worldwide, known for that bold spiced flavour and bright colour. It is a different flavour profile entirely from a standard English breakfast tea — spicier, sweeter, and built to stand up to a heavy pour of milk.

Why does roasted macadamia work alongside Thai tea?

Thai milk tea is rich and creamy on its own, thanks to the condensed milk — so the cookie version needed something to break that richness up rather than add to it. Roasted macadamia does that job with texture rather than flavour: it is a buttery, relatively mild nut that will not compete with the spiced tea, but its crunch creates contrast against the soft, chewy dough and the molten centre. Without it, the whole cookie would read as one uninterrupted note of soft sweetness.

How does Chip's Thai Milk Tea cookie work?

We steep Thai tea — using the ChaTraMue blend — through the brown butter as it cooks, then fold instant Thai milk tea powder straight into the dough itself, so the flavour is layered rather than relying on a single hit. Roasted macadamia goes through for crunch, and the centre is stuffed with a Thai-tea white chocolate ganache made from thickened cream, white chocolate and more Thai tea — white chocolate because, like matcha, Thai tea needs a clean, sweet, non-competing base to let its own spiced, orange-hued character come through rather than fighting with cocoa bitterness.
