Bueno v2: The Brown Butter Upgrade to Our Kinder Bueno Cookie

You asked, we baked — twice. Our original Bueno cookie was one of our most requested flavours from the moment it launched, and once it settled into the archive, the requests for a comeback kept coming. Bueno v2 is that comeback: the same hazelnut-and-milk-chocolate flavour people fell for, rebuilt on a completely different dough base. This is a straight comparison of what changed, why, and which one you should reach for.

What is Bueno v2?

Bueno v2 is a brown butter cookie dough loaded with dark chocolate chunks, stuffed with molten Kinder Bueno spread and finished with a piece of Bueno chocolate on top. It landed in Episode 7, Christmas in July as one of three new flavours built entirely on brown butter bases, alongside S'mores and Salted Caramel Ca Phe. It contains hazelnuts.

What actually changed between Bueno and Bueno v2?

Two things, and both matter more than they sound. First, the dough: the original Bueno cookie used a milk chocolate dough loaded with chopped Kinder Bueno pieces and white chocolate hazelnut spread. Bueno v2 swaps that for a brown butter dough with dark chocolate chunks instead — a nuttier, toffee-deep base that leans savoury where the original leaned sweet. Second, the chocolate: the original folded chopped Bueno pieces through the dough itself for crunch throughout; v2 moves that texture to a single piece of Bueno chocolate on top, and lets the dark chocolate chunks carry the rest of the bite.

The centre is where the two are most alike — both are stuffed with a molten hazelnut filling that oozes when you break the cookie open. That was never the part that needed fixing. What changed is the frame around it.

Why rebuild a cookie that was already popular?

Because brown butter changes more than flavour depth — it changes how a hazelnut filling reads against the dough. Browning the butter cooks off some of its water content and develops nutty, toffee-like compounds through a Maillard reaction, which puts the dough itself on the same flavour register as the hazelnut centre instead of contrasting against it with straight sweetness. The original Bueno was a genuinely good cookie; v2 is what happens when you ask whether the dough could be pulling its weight as hard as the filling. Once we started testing brown butter across the Episode 7 lineup and it worked everywhere else, giving Bueno the same treatment was the obvious next step — and it happened to be the exact flavour our community had been asking to see again.
