The Biscoff Crunch Cookie: Lotus Biscoff, Baked In and Stuffed

One Biscoff cookie was never going to be enough. Our original Biscoff Stuffed — the one that started the whole cookie-butter conversation for us — put Lotus Biscoff spread in the centre of a spiced caramel dough and called it a day. Biscoff Crunch goes further: Biscoff baked straight into the dough, more of it stuffed in the middle, and a layer of toasted kataifi running through for the snap the original never had.

What is the Biscoff Crunch cookie?

Biscoff Crunch is a Biscoff-spiked cookie dough loaded with white chocolate chips, stuffed with Lotus Biscoff spread, and finished with toasted kataifi for crunch. It is an official collaboration with Lotus Biscoff, and the double dose of Biscoff — baked through the dough itself, not just tucked in the centre — is what separates it from a standard stuffed cookie. It contains wheat, milk, egg and soy, and may contain tree nuts and peanuts from shared bakery equipment.

How is Biscoff Crunch different from the original Biscoff Stuffed?

Two changes, both deliberate. The original Biscoff Stuffed used a spiced caramel dough filled with Biscoff spread and topped with a whole Lotus Biscoff biscuit — the Biscoff flavour lived mainly in that one pocket of filling and the biscuit on top. Biscoff Crunch moves the spread into the dough itself as well as the centre, so the flavour runs through every bite instead of concentrating in one spot, and swaps the whole biscuit for toasted kataifi threaded through the middle — trading a single crisp element for a scattered, shattering crunch. White chocolate chips also come in for extra sweetness against the spiced caramel notes.

What is kataifi, and why put it in a Biscoff cookie?

Kataifi is shredded filo pastry — thin, vermicelli-like strands of dough that turn golden and shatteringly crisp once toasted in butter. We use the same technique in our Dubai Chocolate cookie, where it cuts through rich pistachio cream; here it does the same job against Biscoff's caramelised, spiced-cookie sweetness. Two very different flavour bases, the same textural fix — a smooth, sweet filling on its own gets one-note fast, and toasted kataifi is what keeps a bite interesting all the way through.

💡 Tip:Biscoff Crunch is rich, spiced and toasty rather than fruity or bright, so it plays well against something more acidic in a box — a tea-forward flavour like French Earl Grey is a good contrast pick if you are building a mixed order.

Biscoff Crunch first launched in Episode 5, Crunch Time, alongside KitKat Crunch and Dubai Chocolate — a trio built specifically around the toasted-kataifi technique.
